Upside Down Blueberry Cake for One


Blueberry Sauce:
  • ¾ cup Blueberries, 111g
  • 1 tsp Zero Calorie Monkfruit Brown Sugar, 4g, or regular
  • 1 tsp Water, 5ml


  1. Make Jam: Heat berries, brown sugar and water in a small saucepan over medium, stirring occasionally until fruit begins to break down and bubble, about 5-7 min. Use a spoon or potato masher to mash to desired consistency.
  2. In a bowl, mix Blueberry Brunch Dream Cake mix and water.
  3. Grease and line a large wide mug(or ramekin) with parchment paper.
  4. Pour jam into mug, then pour in batter.
  5. Microwave 45 seconds.
  6. Let cool for 2-3 minutes, then invert onto a small plate and remove parchment paper.
