Upside Down Blueberry Cake for One

Ingredients:
- ¼ cup Blueberry Brunch Dream Cake, 42g
- 2½ Tbsp Water, 37ml
- ¾ cup Blueberries, 111g
- 1 tsp Zero Calorie Monkfruit Brown Sugar, 4g, or regular
- 1 tsp Water, 5ml
Instructions:
- Make Jam: Heat berries, brown sugar and water in a small saucepan over medium, stirring occasionally until fruit begins to break down and bubble, about 5-7 min. Use a spoon or potato masher to mash to desired consistency.
- In a bowl, mix Blueberry Brunch Dream Cake mix and water.
- Grease and line a large wide mug(or ramekin) with parchment paper.
- Pour jam into mug, then pour in batter.
- Microwave 45 seconds.
- Let cool for 2-3 minutes, then invert onto a small plate and remove parchment paper.
