Peach Cobbler Cinnamon Rolls

Everyone's favorite breakfast dessert x everyone's favorite summertime fruit? Yes please!

1 ¼ cup all-purpose flour
2 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 cup plain greek yogurt
Optional: ¼ cup heavy cream, to pour on top before baking

Peach Cobbler A La Mode Cashew Butter
1 peach, diced
¼ cup granulated sugar + 1 tbsp cinnamon
½ cup powdered sugar
1-2 tbsp milk
¼ tsp vanilla extract

1. Preheat the oven to 375F. Line a medium round baking pan with parchment paper; set aside.
2. In a medium bowl, add the flour, baking powder, baking soda, salt, and greek yogurt. Mix until a dough forms.
3. Lay the dough out on a lightly floured surface and use your hands to knead a little.
4. Roll the dough out into a rectangle.
5. Spread the peach cobbler a la mode cashew butter over the surface of the dough, leaving about ½” border around the edges.
6. Evenly disperse the diced peach on top of the cashew butter, completely covering the surface. Then, evenly sprinkle the surface with the cinnamon sugar mixture.
7. Roll the dough long ways, and use a sharp knife or pastry cutter to cut into 8-9 rolls. Place the rolls in the prepared baking dish.
If using, warm the heavy cream and pour over the rolls in the baking dish right before baking.
8. Bake for 20-22 minutes or until golden brown.
9. While the rolls are baking, whisk together the ingredients for the glaze in a small bowl.
10. Once the rolls are removed from the oven, let cool for 10 minutes. Then, drizzle the glaze over the rolls.
11. Serve warm.
