Mini Protein Twix Banana Bread

Ingredients:

  • 2 bananas, mashed 
  • 1/4 cup egg whites 
  • 1/4 cup Breanne’s A Twixted Treat Peanut Butter
  • 1/4 cup greek yogurt 
  • 2 tbsp coconut sugar
  • 2/3 cup gluten free 1:1 flour
  • 1 scoop vanilla protein powder 
  • 1 tsp baking powder 

Directions:

  1. Preheat oven to 350 degrees. 
  2. Stir together wet ingredients, then add dry ingredients and mix until just combined.
  3. Divide between two mini loaf pans lined with parchment paper. 
  4. Bake for 22-26 min or until toothpick comes out clean.

  • I am going to try this with sugar substitute instead of the coconut sugar! I am diabetic and am curious how this would turn out. Looks delicious, and love that flavor of butter, it’s my favorite!
