Lemon Cheesecake Crunch Bites

Sweet lemon with a cookie crunch...these bites are sure to be a hit at your next Summer bash!


-1/4 cup Lemon Cheesecake Cashew Butter
-20-25 Lemon Oreo Thins
-Swerve confectioners or regular confectioners sugar
-Splash lemon extract
-Unsweetened vanilla almond milk


1. Add your Oreo thins and cashew butter to a food processor and blend until smooth.
2. Place mixture in the refrigerator for an hour. This will make it easier to roll into balls.
3. Remove from the fridge and roll into 1” balls.
4. Combine your confectioners sugar, a splash of lemon extract, and just enough milk to make a glaze. Pour a little bit of the glaze over each ball and put in the fridge to sit.
5. Enjoy!

  • First off…this Lemon Cheesecake is my FAV!!!!! So when I saw this recipe I knew it would be a hit. When I can find a healthier dessert option that my kids LOVE I’d say thats a win💖
