Healthy Fudgy Cashew Butter Brookies

When you can't decide between to make brownies or cookies.. you can have both with this healthy fudgy brookie recipe featuring our holiday exclusive Naughty or Nice Cashew Butter!


Ingredients
Brownie layer
1/3 cup Naughty or Nice Cashew Butter
1/2 cup Coconut Oil
2 tsp Vanilla Extract
1 egg
1/4 cup Cacao or Cocoa Powder
2/3 cup Almond Flour
1 tsp Baking Soda
1/2 tsp Salt
1/3 cup Coconut Sugar
1/4 cup Almond Milk


Chocolate Chip Cookie layer
1/3 cup Naughty or Nice Cashew Butter
1/2 cup Coconut Oil
2 tsp Vanilla Extract
1 egg
2/3 cup Almond Flour
1 tsp Baking Soda
1/2 tsp Salt
1/3 cup Coconut Sugar
3/4 cup Chocolate Chips


Directions
Preheat your oven to 350 degrees and line an 8’’x8" baking dish with parchment paper.


Brownie layer
1. Mix melted coconut oil and cashew butter together in a bowl. Add egg, vanilla extract and coconut sugar and stir until well combined.
2. In a separate bowl whisk together almond flour, cacao powder, baking soda and salt. Add to the wet ingredients. Lastly, add almond milk.
3. Transfer to the prepared sheet pan and spread out evenly.


Chocolate chip cookie layer
1. Mix melted coconut oil and cashew butter together in a bowl. Add egg, vanilla extract and coconut sugar and stir until well combined.
2. Whisk together almond flour, baking soda and salt. Add the dry ingredients to the wet ingredients. Stir to combine. Fold in chocolate chips.
3. Spread cookie dough layer on top of the brownie layer in the sheet pan.
Bake in preheated oven for 20-25 minutes. After 20 minutes check by sticking a tooth pick in it. If still too gooey, put it back in for another 2-5 minutes. Take them out of the oven and let cool off for 5-10 minutes. Cut into bite size chunks.

Can you use a peanut or almond butter in place of the cashew butter?
Also, do you have any other recipes?
