Double Stuffed Whoopie Pies (for 2!)
These simple ingredient cookies are too good to be true! They truly are double stuffed with a delicious thick peanut butter frosting.
Cookies:
- 1/4 cup chocolate chips
- 2 tbsp pumpkin puree
Filling:
- 2 tbsp vanilla greek yogurt
- 1 tbsp vanilla protein powder
- 1 tbsp Just Plain Nutty Peanut Butter
- Preheat oven to 350 degrees.
- Melt chocolate chips in small bowl, then stir in pumpkin puree.
- Line baking sheet with parchment paper and drop four rounded spoonfuls of batter onto sheet.
- Bake for 20-22 minutes until edges have set. Let cool.
- Stir together filling ingredients and assemble stuffed cookies.
Makes 2 whoopie pies.
