Double Stuffed Whoopie Pies (for 2!)

These simple ingredient cookies are too good to be true! They truly are double stuffed with a delicious thick peanut butter frosting.


Cookies:

  • 1/4 cup chocolate chips
  • 2 tbsp pumpkin puree

Filling:

Directions:
  1. Preheat oven to 350 degrees.
  2. Melt chocolate chips in small bowl, then stir in pumpkin puree.
  3. Line baking sheet with parchment paper and drop four rounded spoonfuls of batter onto sheet.
  4. Bake for 20-22 minutes until edges have set. Let cool.
  5. Stir together filling ingredients and assemble stuffed cookies.

Makes 2 whoopie pies.
