Confetti Banana Bread


Since January is the ultimate fly over month, I feel like we all deserve a reason to celebrate… that reason is CONFETTI BANANA BREAD, heavy on the Frosted Sugar Cookie Spread.

3 ripe Bananas, mashed
1/2 c Yogurt (df)
1/3 c Frosted Sugar Cookie Cashew Butter
2 tbsp Coconut oil
1/4 c Milk (df) - more if needed for moist texture
1 tsp Vanilla Extract
1.5 c Coconut Flour (or any gf flour)
1 tsp Baking Soda
1/4 c Rainbow Sprinkles

1.  Mix together all wet ingredients.

2. Whisk together all dry ingredients.

3.  Pour wet mix into dry mix. Combine well and pour into a lined bread pan. Bake for 30 min on 375F or until the toothpick test is clean. Top with a mix of melted coconut oil + sf powdered sugar as a glaze. Allow to cool before cutting!
