Chocolate Chip Oatmeal Bars
- 1 cup gluten free quick oats
- 1/4 cup 1:1 gluten free flour
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Dash of salt
- 1/2 cup unsweetened applesauce
- 2 eggs
- 1 tbsp coconut oil
- 1/4 cup almond butter
- 1/3 cup coconut sugar
- 1/4 cup plus 2 tbsp chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Mix together all dry ingredients. Mix wet ingredients in separate bowl then stir them into the dry ingredients, saving 2 tbsp chocolate chips.
- Pour into a 8x8 pan lined with parchment paper and sprayed with nonstick spray. Top with remaining chocolate chips.
- Bake for 30-35 minutes or until toothpick comes out mostly clean.
Makes 16 oatmeal bars.
