Chocolate Chip Oatmeal Bars

Chocolate Chip Oatmeal Bars 

  • 1 cup gluten free quick oats
  • 1/4 cup 1:1 gluten free flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • Dash of salt
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 tbsp coconut oil
  • 1/4 cup almond butter
  • 1/3 cup coconut sugar
  • 1/4 cup plus 2 tbsp chocolate chips 

Directions:

  1. Preheat oven to 350 degrees. 
  2. Mix together all dry ingredients. Mix wet ingredients in separate bowl then stir them into the dry ingredients, saving 2 tbsp chocolate chips.  
  3. Pour into a 8x8 pan lined with parchment paper and sprayed with nonstick spray. Top with remaining chocolate chips. 
  4. Bake for 30-35 minutes or until toothpick comes out mostly clean. 

Makes 16 oatmeal bars.
