Blueberry Cheesecake Bread
Ingredients:
- 1 cup oat flour
- 1 cup almond flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2/3 cup coconut sugar
- 1/3 cup Blueberry Cheesecake Almond Butter
- 3 eggs
- 1 tsp vanilla extract
- 2/3 cup almond milk
- 2/3 cup blueberries
Filling:
- 1/4 cup cream cheese
- 2 tbsp sugar
- 2 tbsp almond milk
- 1/2 tsp vanilla
Topping:
- 1/4 cup crushed graham crackers
Directions:
- Preheat oven to 400 degrees.
- Mix together dry ingredients in bowl. Stir together coconut sugar, almond butter, eggs, and vanilla in another bowl.
- Combine wet and dry ingredients, slowly adding milk. Stir in blueberries. Let rest for 10 minutes before pouring half into parchment paper lined loaf pan.
- Stir together cheesecake layer and pour over batter. Pour in remaining batter on top and top with graham cracker crumbs.
- Bake for 5 minutes, then reduce heat to 350 degrees and bake for 45-55 more minutes.
- Let cool completely before removing from pan.
