1. Peanut Butter Protein Bars

The perfect snack for increasing daily protein intake. 

Ingredients:

  • 1/3 Cup Flaxseed meal
  • 1 Tablespoon Coconut oil
  • 1/2 Cup Protein powder
  • 1 Teaspoon Vanilla 
  • 1/4 Cup Honey
  • 2.5 Ounces Dark chocolate
  • 3/4 Cup Peanut butter                

Method: 

In a large mixing bowl, add all of your wet ingredients and mix until well combined. Once well mixed, use a spoon to mix in the flaxseed meal and protein powder. After most of your protein powder has been mixed in, use your hands to continue combining until a dough forms.

Place the dough into a parchment-lined pan and press the dough in until an even layer forms. Melt your dark chocolate until smooth and runny and pour over the peanut butter slab. Place the pan into the refrigerator and let set until the chocolate hardens.

Once the chocolate is set, cut the slab into smaller bars or squares and enjoy.

2. Peanut Butter Cookies

One of the simplest ways to use peanut butter. While you can simply add peanut butter to your standard cookie recipe, there are also more creative ways to make peanut butter cookies. Here’s a basic recipe to try for yourself. 

Ingredients: 

  • 1/2 Cup Coconut sugar
  • 1/2 Cup Oat flour
  • 1 Teaspoon Baking powder
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Sea salt (1/4 Teaspoon for salted peanut butter)
  • 1 Cup Peanut butter
  • 1 Teaspoon Vanilla

Method: 

The first step in creating these delicious cookies is to preheat your oven to 350 degrees. From here, all you need to do is combine all of your ingredients in a mixing bowl. Use a tablespoon to measure out the dough in order to get equally-sized balls.

Place the balls on a baking sheet lined with parchment paper making sure to space each ball out. Gently press the balls using a fork until they are a quarter of an inch thick. Bake for 15 min and leave them to cool completely before eating. 

3. Peanut Butter Banana Popsicles

If you’re looking for a quick, fun snack for the whole family, consider peanut butter banana popsicles. 

Ingredients: 

  • 3 Bananas (fresh or frozen)
  • 1 Cup Non-dairy milk
  • 1/2 Cup Peanut Butter
  • Maple syrup or honey

Method: 

This vegan-friendly recipe is quick and easy to make for summer. In a blender, combine all of your ingredients adding the maple syrup or honey to taste. Make sure to blend until the mixture is perfectly smooth. 

Once blended, pour equal amounts of the mixture into popsicle molds and place into the freezer until completely frozen. If you don’t have popsicle molds, simply pour the mixture into small plastic or freezer-friendly cups. Cover the top of the cup with saran wrap and poke a hole with the ice cream stick in the center to keep it in place.

4. Peanut Butter Energy Balls

A tasty, healthy snack with a quick boost of energy. Here’s a quick recipe to try.

Ingredients: 

  • 1 Cup Old-fashioned rolled oats
  • 1/4 Cup Honey
  • 1/4 Cup Desiccated coconut
  • 1/4 Cup Dark chocolate chips
  • 1/4 Teaspoon Sea salt
  • 1/2 Cup Peanut Butter
  • 1 Teaspoon Vanilla

Method: 

This easy recipe requires no oven and no food processor. In a bowl, mix together all of the ingredients until well combined. Allow the dough to firm up a bit by leaving it in the fridge for an hour or so. 

Once the dough is cold and easier to handle, take it out of the fridge, and using the palms of your hand, place a large teaspoon of the mixture into your hand and roll it into balls. For some added flavor and texture, you could even dip your energy balls into a mixture of greek yogurt and honey and place them in the freezer to firm up. 

5. Peanut Butter Yogurt Bar

Peanut butter yogurt bars come packed with everything you need to power through wherever the day may take you. 

Ingredients: 

  • 3/4 Cup Greek Yoghurt
  • 1/4 Teaspoon Cinnamon
  • 1 Tablespoon Honey
  • 2 Tablespoons Peanut Butter

Method: 

Peanut Butter yogurt bars are a quick and easy snack to make. Starting with a shallow baking sheet, line it with parchment paper and set it aside for later. In a large bowl, mix together the honey, yogurt, and cinnamon. 

Pour the mixture into the baking sheet, creating an even, thin layer. Drop small dollops of peanut butter in the mixture and use a fork to create swirls throughout the sheet. Place the sheet in the freezer for a few hours until frozen solid before removing and breaking the sheet into smaller pieces. 

To store, place the pieces of bark in an airtight container and store them in the freezer.
