Ingredients: 

  • 3/4 cup of peanut butter
  • 1 tsp vanilla extract or pod
  • 1 large egg
  • 2 tbsp almond flour
  • 1/4 of powdered sweetener (optional)

Recipe:

Preheat your oven to 350°F. Stir all the ingredients in a large bowl until the mixture becomes smooth yet thick. Scoop a small section onto a teaspoon and shape it into a ball.

Place the ball on a baking tray with a baking sheet on top and flatten twice with a fork in a cross shape. Repeat until you have used all the mixture.

Bake the cookies for around 12 minutes and let them cool before serving. And that is it!

This recipe makes 12 cookies. Store them in an air-tight container for up to five days. 

2. Keto Peanut Butter Mousse

Ingredients:

  • 1/4 cup of peanut butter
  • 4 oz of softened cream cheese
  • 1/2 cup of heavy cream
  • 1/4 cup of powdered sweetener
  • 1 tsp vanilla extract or pod

Recipe:

In one bowl, whip the cream until it is thick. And in another bowl, mix the rest of the ingredients. Then, fold in the cream until the mixture is a mousse-like consistency.

And that's it! The recipe makes four servings and is best served straight away. Add your favorite keto toppings like a low-carb chocolate sauce to your taste.

3. Keto Peanut Butter Bars

  • 3/4 cup of melted peanut butter
  • 3/4 cup of melted butter
  • 1/2 cup of powdered sweetener
  • 2 cups of peanut flour
  • 1 tsp vanilla extract or pod
  • 1/4 tsp salt
  • 3oz sugar-free dark chocolate
  • 2 tbsp butter

Recipe:

In a large bowl, mix the melted peanut butter, melted butter, sweetener, vanilla extract, and salt. Next, add the peanut butter until combined. The mixture should have a stiff cookie dough consistency and if it does not, add more flour.

Line a baking tray/pan with baking paper. Transfer the mixture to the baking tray and make sure it is even.

To make a chocolate glaze for the top of the bars, melt the chocolate and 2 tbsp of butter together in a heatproof dish over a saucepan of simmering water. Pour the melted mixture over the peanut butter mixture and refrigerate for at least one hour.

Then, cut the mixture into equal square pieces. And that's it! Keep in an airtight container and consume within five days.

4. Keto Peanut Butter Brownies

Ingredients:

  • 2 tbsp melted peanut butter
  • 1/2 cup of melted butter
  • 3/4 cup of almond flour
  • 1/4 cup of powdered sweetener
  • 1/4 cup of unsweetened cocoa powder
  • 2 eggs
  • 1 tsp vanilla extract or pod
  • 1/4 tsp salt

Recipe:

Preheat your oven to 450°F. In a large bowl, mix the almond flour and the sweetener. In a separate bowl, combine the melted butter, cocoa powder, eggs, salt, and vanilla extract until you get a smooth consistency.

Add the almond flour mixture to the egg mixture and stir until combined.

Pour the mixture into a baking tin lined with baking paper that is either 8x8 inches or 5x9 inches. Pour the peanut butter over the mixture and, with a knife, create a swirl pattern.

Bake for around 15 minutes and let them cool before serving. And that is it!

This recipe makes around 12 brownies. Store them in an air-tight container for up to five days.

Ingredients:

  • 1 cup of peanut butter
  • 1/2 cup of coconut flour
  • 3 tbsp low-carb maple syrup

Recipe:

Combine all the ingredients in a bowl until smooth. Use a measuring spoon or roll small pieces in your hands to create ping pong-sized balls and put them on baking paper. Put them in the refrigerator for one hour to set.
