Almond Butter Oatmeal Cookies

There are many types of almond butter that work great in this fantastic pick-me-up cookie recipe. But we like to keep it simple in this recipe with Just Plain Nutty almond butter. 

With a dose of protein from the almond butter and tons of fiber from the oats, these cookies are not only mouthwatering, but they're also good for you! These cookies are low in calories and don't contain any butter. 

Soft and chewy, you'll fall in love with this healthy almond butter snack. 

Ingredients:

  • 1 cup instant oats 
  • 3/4 cup whole wheat flour 
  • 1.5 tsp baking powder 
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt 
  • 1 large egg white 
  • 1/4 cup Just Plain Nutty almond butter 
  • 1/2 cup maple syrup 
  • 2 tbs chocolate chips (optional)

Method:

  1. Whisk together the dry ingredients in a bowl
  2. Mix the egg white and vanilla in a separate bowl and mix in the almond butter until smooth. Then stir in the maple syrup
  3. Add the dry ingredients, stirring until incorporated 
  4. Fold in chocolate chips if you're using them
  5. Drop the cookie dough into scoops onto a baking tray lined with parchment paper. Flatten each scoop to the preferred thickness
  6. Bake at 375° for 11 to 13 minutes

Wait for the cookies to cool before diving into the deliciousness. 

Celery and Almond Butter

This is a fantastic low-carb, healthy snack option that is downright tasty! Simply cut a stalk of celery into pinky-finger length sizes and fill with your favorite almond butter. 

If you want to throw it back to your childhood, sprinkle raisins on top for the classic 'ants on a log' snack.

Almond and Tahini Dip

Almond Butter Smoothie

Ingredients for one serving:

  • 2 frozen bananas
  • 1/2 cup almond milk (or another plant milk)
  • 1 tbsp of your favorite almond butter 
  • 1 tbsp cocoa powder 
  • 1 scoop of your favorite protein powder (chocolate flavor recommended)

Add all ingredients to a blender and blitz until smooth! You'll love the creaminess from the frozen bananas and the silky, smooth chocolatey flavor of the cocoa powder. 

Almond Butter Banana Popsicles 

How does a yummy, homemade and healthy popsicle to beat the summer heat sound? These are creamy, delicious, and guilt-free — the best kind of snack! And all you need are a couple common ingredients and a popsicle mold

Ingredients: 

  • 4 - 5 bananas 
  • 3/4 cup almond butter (try our Bundle Up Blondie for a butterscotch blondie kick!)
  • 1/2 cup unsweetened plant milk
  • 2 tbsp cocoa powder
  • 1 tbsp maple syrup or agave syrup
  • 1/2 tsp vanilla extract 

Method:

  1. Add to food processor or blender and blitz all of the ingredients until very smooth. You're aiming for a puree consistency 
  2. Pour the blended mixture into your popsicle mold and freeze until solid (at least 6 hours)
  3. Store in a sealed container 

Whenever you need a snack to cool you down, your sweet tooth cravings are too much to bear or you just want to treat yourself, dive in, and enjoy! 

Almond, Seed, and Granola Coated Banana

Kids will love this, adults will love this and health-enthusiasts will love this. It's simple, incredibly nutritious, and will give you a huge boost of energy.
